Chef Gabriel Kreuther brings his expertise on the finer things in life to Baccarat Hotel New York, a stunning Midtown hotel from the French crystal company where he was just named Culinary Director.
Kreuther – the Alsatian chef best known for his two-Michelin-star restaurant and traditional, European fine dining – will introduce new menus in the Grand Salon restaurant and bar and lounge. New dishes will be available on the deck, such as smoked eel croquettes, Alsatian spaetzle with cider-braised rabbit and a burger with black pepper sauce. It is a partnership in the brand, which is expected to be for a long time. The hotel, located at 28 West 53rd St. between the fifth and sixth paths, it is the first for the crystal comp, and the space is full of signs of greatness. There are 15,000 crystals throughout the hotel, topped by a $60 million mansion. The main lounge and bar also have some of these crystals, and chandeliers hang throughout the space. Each table has a minimum spend of $75, according to the menu.
What’s New At NYC’s Baccarat Hotel?
The chef, who spent almost ten years working at Moderna before opening his own restaurant, has gained a reputation as one of the best food producers. White tablecloths and European standards are in the game. In a three-star review in 2015, Eater critic Ryan Sutton wrote that “it’s a study in modern indulgence: caviar, truffles and foie gras — lots of foie gras.” It also got three stars in it
, and in 2018 rose from one to two Michelin stars. Kreuther also has a chocolate shop.
By the way, the hotel is opposite his former home in Moderna. And in a nod to Kreuther’s “humble farm-root boy,” where he grew up near the Baccarat factory, the chef made Alsatian “peasant food,” according to the announcement – albeit, of course, with more upscale ingredients. Petit pâté feuillété, a savory pastry, comes here with duck, guinea fowl, foie gras and beef.

The bar at Baccarat Hotel NYC offers a dark atmosphere combined with the elegant and charming New York style. The Baccarat Hotel’s first two restaurants in Midtown open tonight, along with the hotel itself. They, along with the full Chevalier restaurant, are led by chef Shea Gallante, formerly of Cru da Ciano, and Charles Masson, former maitre d’ of French restaurant La Grenouille. On the ground floor there is a bar with a chandelier, which serves expensive cocktails with bar food by chef Gallante. These bites include charcuterie boards (with homemade pates), as well as duck sliders, lobster dumplings, and caviar with potatoes. Cocktails, meanwhile, include classics like the sidecar and the French 75 at $22 each, and for the ultimate gift, house creations like La Vie en Rose (gin, Noilly Prat ambre, green chartreuse, fine sherry and bitters from oranges) at $24 each. . The bar also has an outdoor patio, which should now be warm enough to hang out.
Meanwhile, the hotel’s main room, the salon on the second floor, was also opened today. It is decorated with crystal chandeliers, and offers breakfast and afternoon tea, as well as Gallante small plates (probably similar to those served in the bar) in the evening and cocktails. And here’s the fun part about these cocktails: They, along with all other drinks at the hotel, will be served in pieces from the hotel’s 15,000 Baccarat glassware collection.
The Spirit Of Baccarat
